Any ingredient suggestions, in general and for the protein pancakes, for someone with an allergy to all nuts and coconut? It’s frustrating to have to rule out almond milk, coconut flour, etc.!
That is super frustrating! You can definitely make these without the almond milk. Here’s a recipe I used last night with no milk:
1 tbsp almond meal
1 tbsp coconut flour
1 tbsp flaxseed meal
1 scoop peanutbutter whey protein powder
1/4 tsp baking soda
6 egg whites (or 2 whole eggs)
Dash cinnamon/vanilla to taste
As far as flour, you could use rolled oats (if you are avoiding gluten, just make sure you buy a kind that is gluten free like Bob’s Red Mill). OR I just read an article about using sunflower seed flour! I haven’t tried it so not sure about the taste/texture, but definitely something to look into!
